Tabrizi nougat (nouga or louqa)

The page currently repeats itself repeatedly, each time getting mixed up about what the stuff is made of. It was traditionally made of psyllid honeydew, traditionally misunderstood as tamarisk sap. It was never actually made of actual sap and it's now usually made without the honeydew.

The Iranica article should be reread and the rest of its content added (in paraphrase) here.

The page should also note that this form of gaz is not the full extent of Persian nougat. Persian nougat or gaz covers this Istafani stuff (which is where the name gaz came from) but also covers the Tabrizi stuff, separately known as nuga/nouga/nugha (نوقا) or loka/louqa (لوکا), which is closer to French nougat.  LlywelynII 22:33, 14 June 2025 (UTC)Reply

We don't have an article on Astragalus adscendens but Russian, French, &c. wikis do and Nishinari states that it is that plant and not the tamarisk tree that the psyllid feeds on and from which the manna is derived. The US Dept of Commerce has some details (added) but is ambiguous about specifically which shrub/tree is being discussed.

Nishinari also has more detailed and seemingly more accurate information on the steps in gaz production.  LlywelynII 07:30, 21 June 2025 (UTC)Reply
