Soboro (そぼろ) is a Japanese rice dish traditionally consisting of crumbled ground meat and scrambled egg with rice, often served with vegetables such as peas or green beans. The meat is typically cooked with soy sauce, sugar and mirin, giving it a distinct sweet and savoury flavour. The dish is considered a household staple in Japan and is most commonly eaten at home or as bento.
The dish is considered a form of donburi, as they both consist of meat or fish served with rice. Variants of Soboro often switch out the ground meat with other proteins such as cooked fish.
