The ''rosquilla'' is a Spanish sweet typically made with a simple dough of eggs, sugar, olive oil, milk, lemon zest, and anise-flavored liqueur or anise seeds. Combined with flour and baking powder, and coated in sugar. The dough is shaped into rings, (rosca in Spanish - hence its name.

The rosquilla is a typical Spanish sweet during Holy Week (Easter), whose origin dates back to the ancient Roman Empire, a time when its recipe spread to a large part of Europe and the Mediterranean basin
