Most of the surving and documented flag that have used during this time were varies in size and color. Also, since the original flag was debated whether it was loses during the battle or the "Aguinaldo flag" displayed in Baguio, we're not quite sure on what was the exact design of the first created flag that was sewn in Hong Kong.

As I once said, because the design and shade of yellow is the original that was used during that time.

Though the original face used in the sun is debatable and varies, the copy pasting of the version used in Argentina's "Sun of May" does not do justice to actual variations of faced that are seen within said variations. Hence, it's understandable why they reverted back to the version which seems to have been based form a reconstruction of Aguinaldo's "Personal" (or at least his version) Flag.
